Love & Sushi

My favorite time in the market has to be when our fish delivery comes. We get seafood delivered 3 times a week, which means our case is always at the peak of freshness. These shipments are like Christmas, with something new arriving every week. The Wild Ahi Tuna positively gleams ruby red next to the blazing orange Steelhead Trout and Organic King Salmon, making our fresh seafood case resemble a sunset on ice. It’s a feast for the eyes!
One of our newest staff favorites is the responsibly cultivated deep ocean fish Hawaiian Kanpachi from Blue Ocean Mariculture in Hawaii. Kanpachi is the premier member or the Amberjack family, also known as Yellowfin or Kingfish. This high value #1 sushi grade Hawaiian fish has a firm texture and distinctly fresh, sweet flavor.
Although it can be prepared in any traditional way, it is best served as sushi in my humble opinion.
Making sushi may sound intimidating, but it might be the easiest dinner to make besides frozen pizza – and I am sure you can guess my choice! Start with the ultra-fresh fish from Sunnyside Farms Market, and you’re 90% there.
Sushi for two makes for a romantic date night at home… talking across the counter is easy without someone having to be at the stove, and the leisurely snacking pace lends itself to a delicious and comfortable evening. Hosting a few friends becomes incredibly social, with a steady flow of neverending bites.
We started down our Sushi dinner path with basic ingredients, and though our Shoyu collection has grown the ease of preparation remains. Cut against the grain in delicious thick slices, serve with some sesame oil or mirin, add a quality Shoyu (I’ll share more about this magical soy sauce later!) or stick with Tamari if you are gluten-free.
If you are not confident in rolling sushi, just top your sushi rice for an easy nigiri dish. We like to add thinly sliced avocado, cucumber and radish and toss or top it with Pine River microgreens.
