Apple Cider Brined Pork Loin Chop
Ingredients:
(24 Hour Brine)
- 2 pork loin chops (8-12oz)
(For the Brine) - ½ cup kosher salt
- ½ cup brown sugar
- 1 cup apple cider
- 1 teaspoon red chili flake
- 1 teaspoon coriander
- 1 teaspoon allspice
- 1 tablespoon whole black pepper corns
- 4 cloves garlic (smashed)
- 1 sprig tarragon
Directions:
- Combined all brine ingredients in a large pot
- Pour 1 gallon of warm water into the pot over the brine ingredients, bring to the stove and put on high heat. Bring to a boil
- Add ice to the brine to chill completely
- Dry the pork loin chops with a paper towel
- Put the chops in the cold brine in the same pot, set in the refrigerator to brine over night
- Pull chops from brine after 24 hours. To grill preset grill to 500F, grill over direct heat for 4 minutes on each side for medium or until the pork temps 140f internal temp
