Apple Cider Brined Pork Loin Chop

(24 Hour Brine)

  • 2 pork loin chops (8-12oz)
    (For the Brine)
  • ½ cup kosher salt
  • ½ cup brown sugar
  • 1 cup apple cider
  • 1 teaspoon red chili flake
  • 1 teaspoon coriander
  • 1 teaspoon allspice
  • 1 tablespoon whole black pepper corns
  • 4 cloves garlic (smashed)
  • 1 sprig tarragon


  1. Combined all brine ingredients in a large pot
  2. Pour 1 gallon of warm water into the pot over the brine ingredients, bring to the stove and put on high heat. Bring to a boil
  3. Add ice to the brine to chill completely
  4. Dry the pork loin chops with a paper towel
  5. Put the chops in the cold brine in the same pot, set in the refrigerator to brine over night
  6. Pull chops from brine after 24 hours. To grill preset grill to 500F, grill over direct heat for 4 minutes on each side for medium or until the pork temps 140f internal temp
